During the fall and winter season, there is nothing sweeter than the aroma of freshly baked goods wafting from the oven. I have a bit of an obsession with baking, obviously because of the delicious payoff. It’s also such a relaxing activity and a great opportunity to continually practice mindfulness in our downtime. These apple pie cookies were no exception.
Flaky, golden, sugar-sprinkled crust with a juicy, cinnamon apple filling. That is what comes out of this absolutely, delicious fall recipe from Smitten Kitchen. These honestly turned out so well, and the recipe is very simple to follow. Plan on committing at least three hours for these apple pie bites. The only slight modification I made was using my patterned rolling pin to imprint some designs into my pie dough before cutting out the circles that enveloped my apple slices. I also topped my cookies with sugar in the raw instead of regular granulated sugar to give them that extra crunch.
